The territory we will set out to discover was, in the Pliocene Epoch, located on the edge of Lake Tiberino which once extended over 120 km of the region. Being a coastal area, the vegetation settled in strata on the slopes, naturally compressing over time to form lignite. The succession of geological events eventually caused the lake to disappear. This area was one of the last to dry up and was largely swampland until the beginning of the Middle Ages. Man brought about huge changes to the area, reclaiming swamps and transforming them into agricultural land, as is clearly visible in the low-lying areas. Here, the presence of man is deeply rooted in the Neolithic Era, a time when divinities connected to nature and the environment (mountains, woods and rivers) were venerated.

The peoples who settled the area chose to live on the top of hills or mountains where they built sanctuaries for their ceremonies, some of which are still visible today. Travelling through these hills today you come across medieval castles and archaeological sites dating from Roman or pre-Roman eras. These are framed by olive groves and vineyards from which excellent wines and olive oils are produced. Villages like Torre del Colle, Bevagna and Montefalco are the ideal places to savour these fruits of the earth, as well as providing plenty for those with an appetite for medieval architecture.

The mystic tranquility of Assisi and its countryside cannot fail to enchant. We will visit small farms that form part of the area’s cultural heritage, where winemaking techniques are handed down from family to family.

We will get to know the region’s history and culture through its churches and palaces constructed in local stone, and its people, past and present, like the legendary Saint Francis who was born and spent much of his life here.

Day 1 – Visit to an educational farm. Perugia to Bettona.

In the morning, meet your tour guide at Perugia Central Railway Station and transfer to the biodynamic Mani di Luna farm on the banks of the Chiascio River. We will visit the farm’s vineyards, olive groves and orchard, and afterwards taste their wines accompanied by local Umbrian food. Then it will be time to begin our cycling journey, setting off along a hilly path for the medieval hamlet of Bettona and later to our spa hotel. Enjoy a welcome aperitif including a local speciality – snails – specially prepared for us by the hotel chef. Dinner will include the best of the region’s wine and food: from cold pressed olive oil to cured meats from Norcia and Bettona, and locally-picked mushrooms, truffles and legumes from Valnerina.

Day 2 – Cycling through the Middle Ages. Bettona to Bevagna.

After breakfast the day will begin with a walking tour of the medieval town of Bettona. After the tour, we will begin our ride along the peaks of the Mevanate hills. Surrounded by oak and hornbeam woods, we will reach the archeological site of Colle Mancio and from here we will proceed to Limigiano, a small village renowned for its healing water. After filling up with water, we will proceed towards the peaceful village of Castelbuono where we will contemplate the landscape in tranquil surroundings. Our lunch of tasty local cuisine will be served at the Serpillo restaurant, built into the walls of the old mill of Torre del Colle. After lunch, we will follow a short downhill route to Bevagna. Dinner at the Osteria del Podestà where we will be able to savour typical dishes reinterpreted by the restaurant’s excellent chef. Overnight stay at a historic residence, with swimming pool and wellness centre, and an opportunity for breakfast in your room.

Day 3 – Sagrantino Wine and the four castles. Gualdo Cattaneo to Montefalco.

After breakfast we will visit the old paper mill where paper is still produced using the ancient method of soaking old rags. Afterwards we will cycle towards Gualdo Cattaneo, an authentic example of a medieval hamlet built as a fortress, distinguished by its majestic tower. We then cycle up a gentle incline through landscapes of olive groves and ancient vineyards to reach the medieval town of Montefalco, known worldwide for its Sagrantino and Montefalco rosso wines. Lunch will be served at a typical local restaurant, and later we will continue to the Hotel Oro Rosso. In the afternoon we will meet in the main square of the town and continue together to the biodynamic “Bea” winery for winetasting and a tour of the cellar. We will dine at the famous Coccorone restaurant where a specially prepared menu will include local dishes cooked in Sagrantino wine.

Day 4 – Assisi and organic wines. Montefalco to Assisi.

A private transfer will take us to the Di Filippo organic winery where we will be given a guided tour of the vineyards by an expert oenologist who will explain the different organic and biodynamic wine-making techniques. We will taste the whole range of wines accompanied by local organic cheeses and cold meats, in the magnificent garden overlooking the Umbra Valley. A special picnic will be prepared for us at the Di Filippo winery. Afterwards, we will travel by private transfer to Assisi where we will have lunch in a typical restaurant and, after lunch, we will have a guided tour of the famous town of Saint Francis. Late in the afternoon we will reach Santa Maria degli Angeli for a tour of the cathedral. In the afternoon, private transfer to the exclusive Romantik Hotel.

Day 5 – Gourmet day. Umbrian cooking class.

The morning will be dedicated to relaxation or one of the many activities offered by the hotel in the surroundings of Mount Subasio. In the afternoon it will be time to don your aprons for our Umbrian cooking class, held by the restaurant chef who will lead us on a discovery of local ingredients and regional cuisine, teaching us how to make dishes from Umbria and Italy. At the end of the day, presentation of personal data sheets. Dinner and overnight stay.

Day 6 – After breakfast, private transfer to Perugia Railway Station and final farewells.
